I really enjoyed reading the book, though it reminded me of some things I’d chosen to forget about the food industry. I have to confess that I’m having a terrible time chosing a dish to make. I’d thought about caldo gallega, a Portuguese soup, but I’m running out of soup weather. I don’t eat fish or innards; I would love to make Les Halles’ pommes frites, but that’s so trite. Decisions, decisions.
I’m loving the book! I think I’m 3/4 of the way through and will be sad to finish. No idea what I’m making yet, but now that I’m done with Paper Chef I suppose it’s time to get thinking….

I really enjoyed rereading this book. Great pick, Jo. I gave my post a lot of thought, but ultimately came up with a Spring Vegetable Navarin, that despite its lack of organ meats, might be worthy to serve to our author friend, Tony.
